Hi Y’all!
Today I’m sharing one of my absolute favorite recipes I make weekly! My husband and I like to follow a paleo diet as much as possible and these sweet potatoes are the easiest and yummiest addition to any meal. I’ve fixed these to go along with chicken carnitas, mahi burgers, blue cheese burgers, and just regular old baked chicken. If you follow me on instagram you know how much I fix this simple recipe!
All you need is:
2 large sweet potatoes
1 tablespoon of extra virgin olive oil
1 tablespoon of Trader Joe’s 21 Seasoning Salute
I like to start out with two big sweet potatoes- My husband eats enough for 4 people so I usually use 2 big sweet potatoes to serve both of us for dinner and I’ll usually have a serving size left for my lunch the next day. This wood cutting board is one of my favorite things we own because it was one of the only things my husband had before we got married and I moved in. It’s actually his most prized possession in our kitchen and I can’t help but smile every time I use it!
I usually cut the sweet potatoes into cute little pie shaped pieces like this. I don’t know the official culinary term for this type of cut, but I like to imagine I’m eating little mini pieces of healthy pie every time I take a bite.
I spread them out on a baking sheet and drizzle them with a little bit of olive oil. When we got married I wanted to be very intentional about where I registered and what I registered for so that we really received things we needed and would cherish. My mom actually recommended registering for a nice set of baking sheets because we would use them every day. Why are moms always right? I use these baking sheets every day and I’m so thankful we opted for really good quality ones!
Next, I give them a good coating of Trader Joe’s 21 Seasoning Salute. THIS. SEASONING. Y’ALL. Between this seasoning and the Everything but The Bagel Seasoning I go through them about once a month. I’ve used it on anything from baked chicken to pasta and it never fails to enhance the taste of whatever I throw it on.
This is after putting them in a 425 degree oven for 25-30 minutes. I like mine to be a little on the harder side because I will reheat them in the microwave and I don’t want them to get too soggy.
My favorite thing to put on these is Sriracha! I’ve also tried ketchup in a pinch, but I just love the spicy twist of the sriracha. I hope you guys enjoy this easy, paleo recipe as much as we do! I’m a creature of habit so I will probably make this recipe once a week for the next 10 years.

Easiest Paleo Sweet Potatoes
This is my favorite side to accompany any weeknight meal!
Ingredients
- 2 large sweet potatoes
- 1 tbsp extra virgin olive oil
- 1 tbsp Trader Joe's 21 seasoning salute
- 1 tsp sriracha (optional)
Instructions

Preheat your oven to 425 degrees.

Cut sweet potatoes up into similar sized chunks and place on a large baking sheet.

Drizzle olive oil evenly over sweet potatoes and toss them around a little to make sure both sides are coated evenly.

Generously coat sweet potatoes with 21 seasoning salute and toss again to make sure both sides are coated.

Pop those babies into the oven for 25-30 minutes depending on how soft you like your sweet potatoes to be. If you're reheating in the microwave, I would go for 25 minutes. Let cool for 2 minutes, top with some sriracha, then enjoy!
